This sparkling cider was made by fermenting spent red grape (Cabernet Franc and Merlot) skins from a friend’s Seneca Lake vineyard in juice pressed from our own organically grown Idared apples
but not dominate (think overly salted dishes) the character of the Chardonnay sites
2023 Benoit Courault Gilbourg VDF Blanc 1.5L Magnum Loire, France Domaine Dupeuble François Freres & Cavin tonnelleriesFrom several plots located on the Coteau des Mailles in Faye dAnjou, 40 years old vines of Chenin Blanc, aged 8 months in oak casks and barrique. Great vintage with a rich nose, ripeness but still with balance, the mouthfeel is dense and a wine that is delicious and long with some tension.
