Fermented and macerated for two to three weeks in open oak vats and chestnut casks
After soft pressing the wine remains on the lees for 11 months in 25-hl Slavonian oak barrels

Etna, Eduardo's first from vines not on the "versante nord" (which lends its name to his main white and red wines). Like many of his vines, these are alberello or bush plantings which he farms organically and harvests by hand. The soils are sandy volcanic ash and the elevation ranges
