The juice is fermented in open casks in contact with the skins for about 2 weeks

Skin contact following fermentation lasts for seven days after which the wine ages for a further five months

Aged in concrete

blended with a bit of Pinot from the Grusse en Billat site as well

Weingut Jurtschitsch Rose Sekt Brut, Austria NV Denis Bachelet 2021 Kumusha Cabernet Sauvignon -70% Zweigelt, 15% Pinot Noir, 15% Saint Laurent from cool vineyards. The Zweigelt has a short maceration for color and the Pinot Noir and Saint Laurent are pressed white. Aged for two and a half years on the lees in the bottle. Bottled with approximately 7g L dosage. Delicate and dry with a mineral backbone.
